New Delhi Turkey Meatloaf

I made this for my sister when she came into town as requested.  It turned out great!!

Ingredients

2 tablespoon olive oil
1 medium onion, chopped
1 clove garlic, minced
1 teaspoon curry powder
1/2 teaspoon ginger, ground
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon coriander, ground
1/4 teaspoon cumin
1/4 teaspoon cayenne
1 1/2 pound ground turkey
1 medium egg
1 teaspoon dijon mustard

Instructions

Preheat oven to 325 degrees.  Lightly coat a 9 x 5 inch loaf pan with a nonstick vegetable spray.

Heat oil and sautee olive oil with onions and garlic.  Add curry, ginger, salt, pepper, coriander, cumin, cinnamon and cayenne.   Saute for 5 mintues. Stir occassionally.

Combine the turkey, onion mixture, egg and mustard in a large bowl.

Place this mixture in the loaf pan, press down to make the top flat.

Bake for 80-90 minutes.

Serves 6

    This was incredible. You can use this to make burgers too!
