Thai Pork and Vegetable Soup
Nothing to do on a snowy afternoon I came up with this quick and easy recipe.
Ingredients
1 pound Pork chops boneless, cubed
8 Carrots, baby sliced thin
2 stalks Celery sliced
8 Mushrooms sliced
2 Scallion sliced
8 ounce Snow peas
8 ounce Mung beans
1/2 head Napa cabbage
1 quart Chicken broth
1 tablespoon ginger root
9 teaspoon Chili paste
1 tablespoon Lemon juice
1 tablespoon Lime juice
1/8 teaspoon Anise seed
1/4 teaspoon Cardamom
1/4 teaspoon Cinnamon
1/2 teaspoon Cumin
1/4 teaspoon Coriander
Instructions
Combine all ingredients into a crockpot and cook on high for 6 to 8 hours. Serve over brown rice and garnish with fresh cilantro.
