Lentil Salad

Ingredients

16 ounces lentils
1 large cucumber, diced
1 tablespoon parsley
8 ounces feta cheese
3 celery, diced
2 tablespoon basil
3 green onions, sliced
1 tablespoon dijon mustard
1/2 cup red wine vinegar
2 garlic cloves, minced

Instructions

Cook lentils, let cool then combine all ingredients except for the last 3.  Mix the remaining ingredients well and pour over the lentil mixture.   Mix well, cover, cool and serve.

Yields 8
