Habanero Cucumber Dip

This recipe comes from my friend April at Creatives On Call.  (Check out her site it’s awesome!!)

I haven’t actually tried this recipe yet but it sounds yummy!!

Ingredients

1.5 cucumbers
2 or 3 habaneros, seeded (be careful with these – if you have rubber gloves use them, but most certainly DO NOT TOUCH your face after mincing these!)
1/2 medium red onion diced
1/2 cup chopped cilantro
1 package ranch dip mix
16 oz sour cream ( I like to substitute Greek Yogurt – that makes it healthier and a bit thicker)
black pepper to taste

Instructions

Dice the cucumber into cubes, mince the habaneros, chop the cilantro well. Best with fresh cucumber slices, carrots, celery and then Fritos or mild but coarse bread (Pita bread works too).
