Fish Tacos
This is a recipe for Fish Tacos from a very popular chain in San Diego. It may not sound very good but they are YUMMY!!! I made these a few times while my sister was visiting the summer of 2009. She insisted. They are one of her favorites. Great with some iced cold Corona.
Ingredients
16 ounces cod or favorite whitefish
12 corn tortillas
oil for deep frying
BEER BATTER
1 cup corn meal
1 cup beer
garlic powder to taste
pepper to taste
WHITE SAUCE
1/2 cup light mayonaise (NOT Miracle Whip, I was told it is NOT the same thing)
1/2 cup yogurt
SALSA
1 garlic clove, peeled and minced
5 tomatoes, ripe, peeled
1 onion, minced
2 tablespoons cilantro leaves, chopped
3 jalapeno chiles, chopped
1 teaspoon cumin
2 tablespoons lime juice
1 teaspoons salt
1/4 teaspoon pepper
GARNISH
1 head cabbage finely sliced
1 lime, cut into wedges
Instructions
Prepare salsa and set aside.
Mix corn meal with favorite spices such as garlic powder, red or black ground pepper.
Dip the fish in the beer and then in the corn meal mixture.
Put the vegetable oil into a deep skillet and bring to 375F. Place fish in a single layer. Cook fish until batter is crispy and golden brown.
Heat corn tortillas in the microwave with moist paper towels seperating them.
To assemble, on each tortilla layer the fish fillet, white sauce, salsa and cabbage. Top it off with a squeeze of lime. Fold tortilla over to serve.
These are the best. I could eat them everyday!
