Eggplant Surprise
If you don’t like food as spicy as we do simply cut back on the cayenne pepper.
1 tablespoon olive oil
1.5 lb. ground turkey
1 medium eggplant, diced
1 onion, diced
1 14 1/2 ounce can diced tomatoes
2 tablespoons minced garlic
1 tablespoon oregano
2 teaspoons ground cumin
2 teaspoons ground cinnamon
1 tablespoon fennel seed
1 tablespoon cayenne pepper
Instructions
Preheat the oven to 400 degrees F.
Heat 1 tbsp. olive oil over medium heat in a non-stick skillet.
Saute’ garlic and onions.
Add ground turkey and brown.
Add tomatoes, cumin, cinnamon, oregano and fennel. Mix well.
Add cubed eggplant and mix well again.
Pour mixture in to a large glass baking dish
Bake for approximately 60 minutes.
