Chicken Basil over Rice
I tried this for the first time in the early ’90’s and it is still one of my very favorite quick fixes.
Ingredients
2 teaspoon olive oil
1 small onion, chopped
1 clove garlic, minced
3 medium tomatoes, diced
2 can (16 oz) chicken breast
1/4 cup dried basil
1 tablespoon hot sauce (or to taste preference, I use Tabasco.)
Instructions
Sautee onion and garlic in olive oil in a frying pan until slightly brown. Add chicken, tomatoes, tabasco and then sprinkle the basil on top. Turn to low and simmer until the tomatoes and the basil are well cooked. Serve over rice.
