Chicken Chop Suey

Ingredients
1 pound chicken breast cubed
1 tablespoon olive oil
1 tablespoon garlic
2 teaspoon boullion crystals-chicken flavored
1/2 cup unsweetened pineapple juice
2 tablespoons soy sauce
1/2 teaspoon ginger
1 tablespoon hot chili paste
1/2 cup sliced celery
1/2 cup sliced mushrooms
1 tomato, diced
1/4 cup sliced green onions
1 1/2 cups pea pods
4 ounces water chestnuts (1 can)
3 cups bean sprouts
Instructions
Put the olive oil and garlic in a wok and heat.
Place the chicken in the wok and brown.
Mix the boullion crystals with the pineapple juice, soy sauce, ginger and chili paste. Mix well and set aside.
Add all the vegetables to the wok and heat for about 2 minutes.
Pour the boullion mixture over top, stir well and stir-fry for about 2 more minutes.
Serve over rice.
